- For the dough
- 1 Glass of warm water
- 1 Tablespoon yeast
- two tablespoons of sugar
- 1/4 cup of melted butter
- 4 cups of flour
- 1 Teaspoon of baking powder
- 1/2 teaspoon of salt
- two tablespoons of Yoghurt
- For the filling:
- 1 lb of Poached chicken
- 1 Onion thin wings
- two tablespoons of sumac
- 1/4 teaspoon of cardamom powder
- 1 sprinkle of black pepper
- 1 Teaspoon of salt
- two tablespoons of pomegranate molasses
- For the polishing liquid:
- 1 Large egg
- 2 tablespoons of milk
- Some drops of vinegar
- 1 Pinch of sumac
For the dough, mix the water, yeast, sugar and butter and leave it until the yeast reacts
Gradually add the flour, salt and baking powder and knead to form a soft and non-sticky dough
Let the dough ferment
At the same time in the frying pan, sauté the onions, then add the boiled and crumbled chicken (possible leftover cooked chicken)
Add the sumac, cardamom, pepper and salt, stir for a few minutes, then add the pomegranate molasses, mix, then lift it and let it cool
Divide the dough into balls, roll and stuff it, then shape it to a triangle and stack it on a furnished baking tray greased with butter paper so that the sealing place is down.
Bake for about 10 minutes; then brush it with polishing liquid and sprinkle it with sumac
Put the pies back in the oven from the bottom and bake until it turns red from the bottom and swells, then from the top.
Remove from the oven
