To prepare the dough: combine the semolina, flour, all purpose flour and baking powder in a large bowl, mix well.
Add the milk, butter and orange blossom water to the dry ingredients and combine them well until dough is formed.
Place the dough in a fridge for 20 minutes.
To make the filling, place the dates, figs and walnuts in a food processor and blend until a fine ball is formed.
Remove from the food processor, add cinnamon, orange blossom water and sugar and set aside. For the Ma'amoul cookies preparation: roll the dough to make small balls.
Poke a little hole in each ball with your finger and place some fillings inside them. Close opening until all the filling is concealed.
Take cookie mold and wipe down with some vegetable oil so that the dough does not stick with the mold.
Press the balls in the mold and then tap down the cookie by hitting the mold on the side.
Place the ma'amoul cookies on a baking sheet and bake them for about 20 minutes until the bottom of the cookies become light brown.
When the cookies are baked , remove them from oven and allow cooling on a cooling rack
