The Dates Pie

Dates are known for being the ingredient number one par excellence in terms of use in the countries of the middle east. Middle eastern people use dates in everything thanks to its great nutritional value and dates is the hero of every middle eastern tables, especially during the holy fasting month of ramadan. So if you want to enjoy and try one of the favorite middle eastern ingredients; this date pie recipe will your best choice.

Ingredients
  

FOR THE CAKE

  • 1 pound of pitted dates
  • oz of butter
  • cups of semolina flour
  • cups of whole wheat flour chopped
  • 1 1/2 cups of water
  • 1 tablespoon of baking powder kepta temperate place
  • 1/4 cup of sugar
  • 1 tablespoon of cinnamon
  • 1 teaspoon of salt

FOR THE SYRUP

  • 2 cups of water
  • 1 cup of sugar
  • 1/2 teaspoon rose water

Instructions
 

SOFTENING THE DATES

  • Start by placing a small saucepan over a medium heat; then add in the butter and the pitted dates
  • Gently mix for about Mix for a about 3 minutes or until the dates become soft.

MAKING THE CAKE

  • Preheat your oven to a temperature of about 180°c/ 350°F.
  • Prepare a stand mixer with its paddle attachment
  • Place the semolina flour in the mixer bowl; then add the whole wheat flour; the baking powder and the sugar
  • Mix your dry ingredients for about 30 seconds; then add in the date-butter mixture; the cinnamon and the salt
  • Combine for about 1 minute or until your ingredients are fully incorporated and pour the water and drizzle
  • Combine for about 2 additional minutes; then place the dough in a baking tray
  • Gently flatter your dough; then make sharp marks with the help of a knife; but don't cut the dough all the way through
  • Put a cashew nut into each of the pieces and place the baking tray into the oven and bake for about 35 to 40 minutes

NOW MAKE THE SYRUP:

  • Pour the water and the sugar to a small saucepan and place over a medium high heat
  • Cook your ingredients until the sugar starts to dissolve into the water
  • The syrup should be hot when you pour it on top of the cake
  • Remove the cake out of the oven
  • While the date cake is still hot; pour the syrup on top; then let absorb and cut your cake all the way through following the markings you made
  • Let your cake cool for about 10 minutes
  • Serve your delicious cake!
