  • 2 1/2 kg fish fillets
  • 3 onions thinly sliced
  • 6 tablespoon olive oil
  • 1 tablespoon lemon juice A pinch saffron
  • 1 teaspoon garlic paste
  • 3 teaspoon spice blend
  • 1 tablespoon cumin
  • 1 teaspoon Salt
  • 1 teaspoon black pepper
  • 3 cup rice
  • 6 cup water
  1. --To Prepare Fish : Preheat the oven to 325F. Fry the onions in oil and set them aside. Clean and divine the fish properly. Cut it into pieces and wash it. Mix lemon juice, saffron, spice blend, garlic paste, cumin, salt,black pepper and 1 cup of water in a bowl. Dip the fish fillets in this mixture and let them marinate for about 30 minutes in refrigerator. Add 1/2 teaspoon olive oil in the baking dish and layer the fish fillets in it. Bake them for about 20 minutes or until the fish become tender.
  2. --To Prepare Rice : Wash the rice 3-4 times and soak for 1 hour. Then boil them with salt and cumin. After boiling, drain extra water. Take a sauce pan add a tablespoon olive oil, heat it a while. Add the remaining fish marinade mixture and cook it on slow heat until oil appears on the top. Pour this over the boiled rice and place it on slow heat for about 8 minutes.
  3. --Garnishing and Serving : Garnish it as you like. To serve, pile the rice on a platter and top it with golden baked fish (fillets). Serve it with traditional tahini sauce.
