Ingredients
  • 2 pounds fish
  • 2 red bell peppers diced
  • 2 green bell peppers diced
  • 2 onions peeled and sliced
  • 1 clove of garlic finely chopped
  • 3 tbsp olive oil
  • 800 g tomatoes canned
  • 1 Jalapeno pepper chopped
  • ½ tbsp pepper
  • 1 tbsp lemon zest Salt to taste
  • 1 tbsp turmeric powder
  • 1 tbsp grounded mix spices
  • 1 tbsp orange zest
  • 1 tbsp paprika
  • 1 tbsp cumin powder
Instructions
  1. Take a skillet, put olive oil and sauté onions, bell peppers and jalapeno on medium heat. Add chopped garlic and stir well.
  2. Add tomatoes and half cup water.
  3. Now add all remaining ingredients except fish and simmer on low heat for 10 minutes.
  4. Take an oven dish, grease well. Now add one third tomato mixture. Marinate the fish with tomato blend.
  5. Preheat the oven to 180°C and bake the fish for 15-20 minutes.
