  • 1 whole chicken cut into pieces
  • 1/2 onion chopped
  • 3 tomatoes diced
  • 2 potatoes diced
  • 1 carrots diced
  • 1/2 green pepper chopped
  • 1 seeded jalapeno
  • 4 garlic cloves
  • 3 tablespoon vegetable oil Salt to taste
  • 1 tablespoon xawaash mixed spice
  • 2 tablespoon tomato paste
  • 1 cup fresh cilantro
  • 1 tablespoon vegetable seasoning
  • 1 cup water
  • 2 tablespoon ghee
  1. Add chopped onions, seeded jalapeno, green pepper, garlic cloves and fresh cilantro in food processor and slightly blend.
  2. Then add tomatoes in it and blend well.
  3. Set this blended veggie mixture aside.
  4. Take a pan and add vegetable oil and xawaash (mixture of toasted and blended cumin,seeds, coriander seeds, black peppercorns, cinnamon bark, cardamom pods, cloves and turmeric powder) in it .
  5. Then add chicken and stir well.
  6. Add vegetable seasoning and salt in it and then brown the chicken. After that add potatoes, carrots in it add stir well.
  7. Add blended veggie mixture and water in it and cook over medium heat for about 10 minutes.
  8. Now add tomato paste in it and cook for another 20 minutes. Maraq dajaj is ready to serve.
  9. Serve with tortilla or simply as soup.
