  • 2 small onions grated
  • 1 kg and 1/2ground beef
  • 85 tablespoon % lean 1salt
  • 1 teaspoon black pepper powder
  • 1 teaspoon turmeric
  • 1 teaspoon ground sumac
  • 1/4 ml teaspoon Saffron 150boiling water
  1. Combine beef, add salt, black pepper powder, turmeric, sumac in it and mix them well. Soak saffron in 100ml of boiling water for about 10 minutes.
  2. Add about 2-3 teaspoons of saffron water in the beef marinade and mix well. Cover it and keep this marinade in the refrigerator for about 8-10 hours.
  3. Take a handful of marinated ground beef and place it on skewers and press onto skewers. Make long kebabs and shape them with thumb.
  4. Place them on the hot barbecue grill, turning sides after 30 seconds. Remove skewers from the BBQ pit when kebabs becomes golden.
  5. Serve Koobideh kebabs with ketchup/BBQ sauce and fresh salad.nd onions in a bowl.
