Ingredients :

  • 2 kilos fish fillets (zubbaidi or any preferred)
  • 2 vegetable or olive oil for baking Use more vegetable oil if frying
  • 1 teaspoon Salt
  • ½ teaspoon black pepper
  • 1 teaspoon cinnamon .
  • 1 teaspoon cumin
  • ¾ teaspoon coriander powder
  • ¾ teaspoon ginger powder
  • 5 onions, sliced
  • ½ teaspoon Salt Add on onions
  • 3 tablespoons vegetable or olive oil If the fish is fried, use same oil
  • 1 bunch parsley chopped
  • 1-1½ cups hot water
  • ¾ teaspoon cinnamon . sprinkle on fried onions
  • Tahini Sauce
  • ½-¾ cup tahini paste
  • 1 lemon juice,
  • ½ orange juice (optional)
  • salt and black pepper (to taste)
  • cup water for the tahini sauce

Instructions :

  1. Marinate fish with black pepper, cumin, coriander, ginger, cinnamon and salt for hour. Fry the fish or bake uncovered in oven until soft. Set aside.
  2. In a frying pan, add onions, sprinkle with salt. Fry with vegetable or olive oil. Remove away from heat, add the hot water. Return back into low heat for about 20 minutes until onions are softened.
  3. Sprinkle the onions with cinnamon powder.
  4. Lay the cooked fish into a pot. Top the fish with onions and chopped parsley.
  5. Prepare the tahini sauce. Mix the tahini paste, lemon juice, orange juice (if used), water and spices. Use a small whisk for smooth consistency. Top the

  7. Add hot water on the fish to slightly cover the fish. Put the fish on high heat until boils. Reduce to low and simmer for 15 minutes.
