Ingredients
- 3 tablespoons freekeh . cracked green wheat
- 2 tablespoons butter
- 1 medium onion finely chopped.
- tablespoon ½oatmeal.
- 2 cups chicken or meat broth.
- 1 cube vegetable or chicken stock.
- teaspoon ½cumin.
- teaspoon ¼sweet paprika.
- 1 teaspoon tomato paste
- Salt and black pepper as desired.
Instructions
- Soak the freekeh in water for at least 2 hours.
- In a large pot over medium heat, Saute the onion with the butter for 2 minutes.
- Drain the freekeh well, then add to the onion, stir well for 1 minute.
- Add oatmeal, black pepper, cumin, and paprika to onion keep stirring for 5 minutes.
- Add broth, chicken stock cube, and tomato paste to freekeh mixture and stir well, then add salt as desired.
- Let the freekeh soup simmer over low heat until all ingredients are cooked and serve warm.
