Fish Sayadieh, Rice with Nuts and Fried Fish

- 2 Pieces large onions
- 1 and ½ pounds of fish fillets
- 1/2 cup of olive oil
- 2 Maggi stock Cubes
- 2 cups of washed and soaked rice into hot water and salt with a spoonful of vinegar for about an hour and a half
- 1 1/2 cups of mixed nuts
- For the spices
- 4 pieces cardamom pods
- 1 piece bay leaf
- 1 cinnamon stick
- 2 black lemons
- 1 teaspoon of cinnamon powder
- 1 teaspoon of crushed lemon
- 1 pinch of salt
- Place the onion in a large sauce pan and sauté into hot oil until it starts caramelizing over a medium high, heat.
- Add all of the flavorings; then mix very well until you smell the aromas
- Pour the boiling water; then add in the sugar; and the magi stock
- Cover the saucepan and let it boil on a medium heat for about 20 minutes until it becomes caramelized
- Drain the onion from the broth and set it aside
- Add in the rice; then let simmer with the lid open until the rice rises
- Season the fish with the salt, the lemon and the fish spices
- You can whether steam the fish on top of the rice by putting it right before the rice is perfectly cooked; or if you want to pan fry it into a small quantity of hot oil for a few minutes
- Your dish is now ready; serve the rice with the fried fish and top with nuts of your choice
- Serve and enjoy your dish!
