  • 6 medium eggplants
  • 2 lb ground beef
  • 2 large Pita bread
  • 2 tbsp vegetable oil
  • 2 cups yogurt
  • 3 tbsp tahini
  • 4 garlic cloves
  • 1 onion
  • 3 cups water
  • 4 tbsp tomato paste
  • 3 gloves garlic
  1. In a pan over medium heat, add two vegetable oil tablespoons, minced onions, and the ground meat. Season with salt and black pepper. Cook for about 7 minutes or till the meat is cooked.
  2. Cut the pita bread to smaller square pieces
  3. Fry the square pieces of the pita bread in vegetable oil till they turn red. Remove the middle part of the eggplant using vegetable corer .Stuff the eggplants with half of the cooked meat
  4. Fry the eggplant in vegetable oil for 4 mins, In a pan we add 2 tbsp. vegetable oil, add the minced onion cook for 3 mins
  5. Add 4 cups of water and Add 4 tbsps. of tomato paste.
  6. Once it boils, wait till the mixture becomes homogenous then add the other half of the meat
  7. After 4 mins, add the fried eggplant and let still in the pan for 4 mins
  8. Then remove the eggplants and put aside
  9. In a bowl mix 2 cups of yogurt, 3 tbsp. tahini, 3 minced cloves garlic
  10. In a rectangular dish, add the fried bread, the tomato mixture we did before, then the yogurt mixture then the fried eggplants then seasons with nuts .
