Chicken Tagine

This is a favorite Moroccan dish, better known as Chicken Tagine. Even though Morocco is part of Africa, but the food is still considered as a middle eastern recipe. The dish is made of veggies, spices, meats, and different delicious ingredients cooked in one in the traditional Moroccan plate. This recipe is cooked in a traditional plate with a cover, which is also called Tagine cookware. Additionally, there’s a good style of Tagine meals, and not many places can provide the precise same style. However, whether boiled with dried fruit, nuts, preserved lemons or olives, the meats and vegetables in Tagines are continuously tender and aromatic.

Tajine El Dajaj

  • 1 kg chicken (thighs)
  • 2 onions (finely chopped)
  • 6 garlic cloves (minced)
  • 2 tomatoes (finely chopped)
  • 2 teaspoon allspice
  • Salt (to taste)
  • 2 green chili (chopped)
  • 1/4 cup coriander leaves
  • 2 carrots (sliced vertically)
  • 1 potato (sliced)
  • 1 lemon (sliced)
  • 3 tablespoon olive oil
  • 1 cup water
  1. Put olive oil in the tajine.
  2. Add onions in it and saute for 5 minutes, over medium low heat, until soft enough.
  3. Add garlic paste in it and stir for a minute.
  4. Then add chicken thighs and cook for another 5 minutes, over medium flame.
  5. Add tomatoes, green chili, salt and allspice in it and mix them well.
  6. Place potato, carrots, lemon slices and coriander leaves over it and cover. Let it cook for 8-12 minutes over low
  7. Remove the Tajine cover and add a large cup of water in it then cover it again. Now cook it for 30 minutes over low heat.
  8. Serve it traditionally in the tajine as it is.

Ingredients
