Ingredients
  

  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 package cream cheese
  • 1 teaspoon Salt
  • 2 cup teaspoons ground cinnamon
  • 1 cup vegetable oil
  • 1 package cream cheese
  • 1/4 cup butter
  • 2 cups confectioners sugar .
  • 3 eggs
  • 2 cups shredded carrots
  • 1 flaked coconut
  • 1 chopped walnuts
  • 1 can crushed pineapple
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 175 c.
  • Grease and flour the pan.
  • Mix flour, baking soda, baking powder, salt and
  • cinnamon. In the center add sugar, oil, eggs and
  • vanilla. Mix with wooden spoon until smooth.
  • Add carrots, coconut, walnuts and pineapple.
  • Pour into the pan. Bake at 175 c for about 45
  • minutes. Don't panic, the center will shrink a little.
  • Allow to cool.
  • To cover, mix butter and cream cheese until everything becomes smooth
  • Add the confectioners' sugar and beat until it becomes creamy
