Carrot Pineapple Cake

Carrot Pineapple Cake is a delicious Middle Eastern moist cake containing crushed pineapple and fresh grated carrots. It’s all topped off having a glossy sleek cheese icing and for a few crunch cooked coconut flakes.

Carrot Pineapple Cake

  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 package cream cheese
  • 1 teaspoon Salt
  • 2 cup teaspoons ground cinnamon
  • 1 cup vegetable oil
  • 1 package cream cheese
  • 1/4 cup butter
  • 2 cups confectioners sugar .
  • 3 eggs
  • 2 cups shredded carrots
  • 1 flaked coconut
  • 1 chopped walnuts
  • 1 can crushed pineapple
  • 1 teaspoon vanilla extract
  1. Preheat oven to 175 c.
  2. Grease and flour the pan.
  3. Mix flour, baking soda, baking powder, salt and
  4. cinnamon. In the center add sugar, oil, eggs and
  5. vanilla. Mix with wooden spoon until smooth.
  6. Add carrots, coconut, walnuts and pineapple.
  7. Pour into the pan. Bake at 175 c for about 45
  8. minutes. Don’t panic, the center will shrink a little.
  9. Allow to cool.
  10. To cover, mix butter and cream cheese until
  11. smooth. Add the confectioners’ sugar and beat until
  12. creamy.
