  • 2 pounds of meat
  • 6 cups of water
  • 1 onion Salt & pepper
  • 1 cardamom
  • 2 pieces of mastic
  1. Bring the water to boil. add the meat.
  2. Now this is an important step, get an empty dish beside you, hold a spoon and collect these pink-brown bubbles that appears.
  3. These bubbles continue to appear for about 15-20 minutes, they must be removed inorder to obtain a pure lovely colored soup.
  4. Put the onion, salt & pepper then cover.
  5. In a small saucepan, on medium heat, put the oil, cardamom & mastic.
  6. Now, add them in the soup & cover again.
  7. Leave for about 2 hours, you may need to add boiling water. When it's done, get out the meat, remove any bones and cut the meat into small pieces & put them back to your soup.
