Halawat Aljubn is one of the traditional popular sweets in the Levant, and its origin goes back to the city of Hama, and the halawat al-jubn industry dates back to dozens of years ago.

Ingredients
  

--For dough :

  • 1 cup milk
  • 2/3 cup sugar
  • 1 tablespoon orange blossom water
  • 1 cup Of fine semolina
  • 1 cup and 1/2grated mozzarella cheese
  • 1/4 cup Of qater sugar syrup

--Qeshta filling :

  • 2 cup milk
  • 3 tablespoon cornstarch
  • 1 cup homemade cottage cheese packed
  • 2-3 tablespoon sugar
  • 1 cup Of table cream.
  • 2 tablespoon Of orange blossom water

Instructions
 

--Dough Preparation :

  • Pour milk in a saucepan and add sugar and orange blossom water in it. Stir and cook on high heat and bring to boil. Reduce heat to lowest heat. Add semolina in it, stir and cook for 2 minutes until well combined. Now add mozzarella cheese and stir until the cheese melts. Spread qatr on clean surface and place the dough over it. Be careful as the dough is hot. Start spreading the dough with hands, making sure that it does not become too thin. Let it stand for 30 seconds.

--Qeshta Preparation

  • For making Qeshta, pour milk in saucepan, add cornstarch and sugar in it. Let it cook over medium heat, stir constantly and bring to boil. In a bowl, add cottage cheese, cream and orange blossom water and mix lightly. Pour the cooked milk mixture on it. Stir and mix them gently. Qeshta is ready.

--Halawat Al Jubn Preparation

  • For making Qeshta, pour milk in saucepan, add cornstarch and sugar in it. Let it cook over medium heat, stir constantly and bring to boil. In a bowl, add cottage cheese, cream and orange blossom water and mix lightly. Pour the cooked milk mixture on it. Stir and mix them gently. Qeshta is ready.
  • Add Al-Qeshta over the dough.
  • Now grab the edge, roll it over once, take it under and roll again.
  • Cut this first roll away from the dough. Do the same for the remaining dough..
  • Make bite size pieces of the filled dough.
  • Arrange them in the plate and garnish with chopped pistachios and pour qater as required.
  • Delicious Halawat aljubn is ready
  • Serve cold.
