Fattet Hummus ( Teskya) is one of the famous dishes in the Levant, especially in Syria, where Damascus is distinguished by this wonderful dish. “Fattet hummus” is one of the famous oriental dishes that the Syrian table is almost devoid of during Eid al-Adha. It is considered one of the main meals on this occasion, which is served with sacrifice meat, in addition to other foods associated with the feast such as tortillas, mumbar, and meat fruits. Fatteh is one of the meals that expresses the demise of differences between social classes. It is considered a popular meal that is prepared in different ways, expressing the culture of the country in which it is prepared. However, “vinegar and garlic fatteh” is one of the authentic Middle Eastern dishes. Despite the different ways of preparing the fatteh in the different Arab countries, each of which is characterized by its own taste, the origin of the fatteh, before the development of the methods of preparing it, is questioned. But Teskya remains one of the most delicious recipes.

Ingredients
  

  • 1 Pound of boiled chickpeas with the broth
  • 1 teaspoon cumin
  • 2 loaves of toasted Lebanese Pita bread
  • To prepare the tahini sauce:
  • 4 tablespoons milk
  • 4 tablespoons tahini
  • juice of 1 lemon
  • 2 crushed garlic cloves with 2 teaspoons salt
  • To garnish
  • 1 Tablespoon of finely chopped parsley
  • 1 teaspoon of crushed red pepper
  • Toasted Lebanese Pita bread
  • 1 Cup of toasted nuts

Instructions
 

  • Start preparing the tahini sauce, in a deep bowl, add the milk and tahini, and mix the ingredients very well with a hand mixer
  • In a bowl, mix the crushed garlic with salt and lemon, add it to the previous mixture and stir the ingredients until they are very well mixed together.
  • Put in a suitable serving bowl a layer of bread and mix them with cumin, then add a small amount of chickpea broth with some chickpeas until the bread absorbs the broth completely
  • Add a small amount of sauce, stir well, then arrange the bread to form the first layer
  • Put a layer of chickpeas without broth and distribute it evenly
  • Put a layer of the sauce and distribute it also until the surface is flat
  • Sauté the ghee with the available nuts and distribute it over the serving bowl after decorating it with parsley, fried bread and ground red pepper as desired, so that the dish is ready
  • Serve and enjoy your Fatteh or Teskya
